Recipe Alert: Shrimp Stir Fry



I threw this together last night and had a request for the recipe from Gail.  Thanks Gail for your interest.  

Ingredients:
1 can Stir Fry Vegetables
1 can Bean Sprouts
1 can Mushroom pieces
3 Tbsp Sesame Oil (or any oil)
1 pkg Medium Frozen pre-cooked Shrimp (Thaw and remove tails)
1 can  Chicken Gravy
1/4 cup or less of Soy Sauce
1 1/2 cup White Rice
Prepare White Rice as instructed.  I use a Rice Cooker, which takes about 20 minutes. So I start this before the following.
In large skillet or Wok, heat Sesame Oil.
Add all drained canned vegetables and Soy Sauce
Stir fry for about 10 minutes
Add 3/4 can to whole can of Chicken Gravy (weird right? But soooo good) and Shrimp
Stir for a few minutes and simmer for 10 - 15 minutes

I like using Polar canned Chinese Vegetables for my Stir Fry, but any would work.

Recipe Alert: Homemade Black Raspberry Pie

Ingredients:
Pastry for 2-crust 9 inch pie
3/4 c. sugar
1/3 c. flour
1/2 tsp. cinnamon
4 c. Black Raspberries
1 1/2 tbsp. butter
Milk (opt.)
Roll out half the pastry and fit into 9 inch pie plate. Or you can use the frozen bottom shells, as I did. Then use the shell tops from the store refrigerator section.
Combine sugar, flour and cinnamon. Toss with Black Raspberries, pour into pie shell and dot with butter.
Cover with top crust, brush lightly with milk and make slits in top with knife point.
Bake in preheated 425 degree oven for 35 minutes or until browned and bubbly. Serve warm.
*** I added 2 Tbsp of Cornstarch to mine because it was a little runny the first time.  However, if you let the pie sit for 3-4 hours before serving, it will set. You can just rewarm it. ****

Recipe Alert: Simple Breakfast Pastries



Prep time: 10 minutes
Cook time: 10 minutes
Total time: 20 minutes
Yields: 8 pastries

Ingredients:
2 packages Crescent Roll Dough
1/2 cup Cream Cheese
1/2 cup Any flavor of Jam
1 Dollop of Cool Whip

Recipe Alert! Green Smoothie Drink


2 C. Kale, 1 Banana, 5 Strawberries, 1 Apple, 3/4 C Water 

(The Kiwi werent ripe enough )


Blend together for about 3 minutes

This is what it will look like

I added 2 Tablespoon of this awesome Stuff !! 

 

Tastes SOO good though and good for your Health !

Recipe Alert: Baked Chicken with Mushrooms & Tomatoes on Pasta

I just threw this meal together the other night and it turned out sooo good.


(It will look a little "soupy" in the dish, but so good over the noodles)

  All I used was:

  • 4 Boneless Chicken Breasts
  • Can of Cream of Mushroom Soup
  • Can of Diced Tomatoes
  • Marinated Portabella & Red Peppers* (you can substitute regular marinated mushrooms, one can of sliced mushrooms, or 1 c of sliced fresh mushrooms)
  • Half a Bag of Egg Noodles
  • Can of Water
  • Seasoning to Taste

Preheat the oven to 350.


Mix together in a bowl:
  • Mushroom Soup
  • Then fill the soup can with water and add that
  • Diced Tomatoes (liquid drained)
  • Seasoning to taste..... I used a little Black Pepper, Seasoning Salt (I just guess on my seasoning)

Spray a little Olive Oil or Cooking Spray in a glass baking dish.  

Place Chicken Breast in baking dish.  I made 3 cuts on the top of the chicken, so it would make it tender while baking.  This is up to you though.

Pour mixture from bowl onto the chicken.
Then I added the Marinated Portabella & Red Peppers on top of the chicken and
in the mixture.
Then pop it in the oven for 30 minutes or until chicken is cooked throughly.

Boil some water and add the Egg Noodles, cook as directed on package.

Serve Chicken on Pasta.  YUMMMMM !!  ;-)

* The Marinated Portabella Mushrooms & Red Peppers I bought at a store here called, Aldi's. You may also find them in your local supermarket or a regular marinated mushroom will work too.

Peanut Butter Cookies homemade with Splenda


Ingredients

  • 1/2 cup Splenda white sugar
  • 1/2 cup packed Splenda brown sugar
  • 1/2 cup butter, room temperature
  • 1/2 cup peanut butter (I added another heaping spoonful of PB. ;-) )
  • 1 egg
  • 1 & 1/4 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method

Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture.

Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
For chewier cookies, bake at 300°F for 15 minutes.

* If you want to use regular sugars, it would be the same measurements as listed above.  
* I spray a fork with a little bit of oil spray before I make the crisscross pattern.  Seems to help a lot.
   Or you could put the dough, wrapped in plastic, in the fridge for a few hours before baking.

Thats It!!!  They are so good.  I dont taste any difference with using the sugar substitutes either.

How to make Scotch Eggs

My dear friend, Hannah just showed me these wonderful yummies; Scotch Eggs. For those of you that don't know what they are (me included); each one has sausage meat wrapped around a boiled egg with bread crumbs and then fried.






Here is the Website with a recipe that she gave to me.  I can't wait to try this. She also mentioned that it is eaten cold and not warmed.

White Chocolate covered Ritz Crackers with Peanut Butter in the Middle

We just made these for Valentines Day. They are ooh soo good! My husband said they taste like Nutter Butters. LOL So easy to make. The following pictures will show just how easy it is. Melt (microwave) the chocolate at 50% heat with 30 minute intervals. Stirring at each one until melted.

What you will need
Melt Chocolate/Dip Pretzels & Crackers
Spread Creamy Peanut Butter
between two Ritz Crackers
Add sprinkles
Let sit on wax paper until hardened

Easy Salad in a Jar !!!






Salad
Makes 2 salads (Salads pictured were made in 32 oz mason jars)

1 cup cooked quinoa
2 big handfuls spinach
1 cup chopped mushrooms
1 cup cherry tomatoes
1/2 red onion, diced
4 tbsp balsamic vinagrette

Layer the ingredients in the jar as follows:
dressing
onion
mushrooms
tomatoes
quinoa
spinach

The most important part of the layering is making sure the dressing and the spinach (or whatever 'leaf' you choose) don't touch. As long as they stay separate, these salads can be made up to 4 days in advance and will stay fresh in the fridge with a lid on. This is one of my tricks to eating salad everyday for lunch at work. I make a few jars on Sunday night and just grab one to bring to work everyday. When you're ready to eat, just shake it up.
